It’s not “all about honor” to everyone. And plenty of people think that mentality in a sport is worthless. Also, this is not like the Mayweather-Ortiz cheap shot. That was the referee’s fault. He brought the fighters together and didn’t properly restart them. This is not the case here.

Cage manners 101: Before the ref. says “fight!”, you ask if the other fighter wants to touch gloves. If the other fighter says “no” or doesn’t respond, that means no glove touching. I don’t know if they agreed to touch gloves, which would make it an even cheaper shot, or if Maia just assumed they were going to. Anyway, Gaff didn’t need to pretend she was going to touch gloves.
It’s a cheap shot and both fighters will pay for it. Maia with the KO and Gaff with the stain on her reputation. Not many people like to train with or help dirty fighters.
